Thanksgiving Sweet Potato Toast
Sweet potato casserole, sweet potato hash and mashed sweet potatoes. Oh, so many ways to prepare these tasty little treats for Thanksgiving. Along with some of the more complex recipes, you can also create a basic (and completely custom-made) sweet potato side that is perfect for the kids. What is it? Sweet potato toast!
If you’re saying, “Sweet potato toast? Really?” you aren’t alone. It does sound sort of strange. But, it’s entirely easy. And, the best part is that the kiddos can top it with whatever they want. This cuts out some of the, “Mommy, I don’t like that” challenges.
Here’s What You’ll Need:
- Sweet potatoes
- Anything that you want to top it with (butter, apple butter, marshmallow spread, cinnamon, thinly sliced apples, pecan crumble or anything else!)
- Slice the potatoes (you’ll need to do this for the kids) into ¼-inch thick sections. Each slice should look like a large, flat potato chip.
- Put the slices in the toaster (just like you’d put bread in). Toast the potatoes until they are cooked through. The exact time depends on your toaster. Watch the potatoes carefully to make sure that they don’t burn. Start with a lower time or lower setting. Take the slices out to see if they’re cooked. If not, toast them some more. If you notice that they’re burning or blackening, take them out immediately.
- Top the sweet potato toast with whatever your child wants!
